概述

胰蛋白酶是一种丝氨酸蛋白水解酶，分子量是23300道尔顿，是由223个氨基酸残基组成的单一肽链。胰蛋白酶特异性严密，专一作用于由碱性氨基酸精氨酸及亮氨酸所组成的肽键，酶本身极易自溶，活力也逐步下降或丧失。易溶于水，不溶于三氯甲烷、乙醇，乙醚和甘油，**适PH8.0-9.0,在PH1.8时，短时煮沸几乎不失活，在热溶液中加盐则蛋白质沉淀，滤液不显于酶作用，Ca2+对胰蛋白酶有保护和激活作用。

用途
