维生素B1又称硫胺素（thiamine） 或抗神经炎素，是第一个被发现的维生素，由真菌、微生物和植物合成，动物和人类则只能从食物中获取。维生素B1主要存在于种子的外皮和胚芽中，如米糠和麸皮中含量很丰富，在酵母菌中含量也极丰富。硫胺素由嘧啶环和噻唑环结合而成，在体内参与糖代谢。 [2]    理化性质 硫胺素常以其盐酸盐的形式出现 [3]  ，分子式C12H17ClN4OS·HCl，分子量337.29。又称盐酸硫胺。白色结晶性粉末。有微弱特臭、味苦，有潮解性。熔点248℃，易溶于水，微溶于乙醇，不溶于醚和苯中。维生素B1具有维持正常糖代谢及神经传导的功能。自然界中以酵母中维生素B1含量最多。可由2-甲基呋喃和乙烯腈等合成或由β-乙氧基丙酸乙酯和甲酸乙酯等合成。 [4] 

营养增补剂。维生素B1在体内参与糖类的中间代谢。机体内维生素B1 不足，辅羧化酶活性下降，糖代谢受阻，从而影响整个机体代谢过程。其中丙酮脱羧受阻，不能进入三羧酸循环，不继续氧化，在组织中堆积。这时，神经组织供能不足，于是可出现相应的神经肌肉症状，如多发性神经炎，肌肉萎缩和水肿，严重时还可以影响心肌和脑组织的功能。维生素B1不足还会引起消化不良，食欲不振和便秘等病症。

维生素B1又称硫胺素或抗神经炎维生素或抗脚气病维生素，为白色晶体，在有氧化剂存在时容易被氧化产生脱氢硫胺素，后者在有紫外光照射时呈现蓝色荧光。由嘧啶环和噻唑环通过亚甲基结合而成的一种B族维生素。为白色结晶或结晶性粉末；有微弱的特臭，味苦，有引湿性，露置在空气中，易吸收水分。在碱性溶液中容易分解变质。
