概述

糜蛋白酶又称为胰凝乳蛋白酶，是从牛（猪）的新鲜胰腺中提取分离出的肽链内切酶。呈白色、微黄色结晶或无定形粉末，易溶于水，不溶于有机溶剂。相对分子质量24000，**适PH8~9。干态稳定，水溶液中会迅速失活，以PH3~4的水溶液为**稳定。作用于蛋白质时，优先水解L-酪氨酸和L-苯丙氨酸的羧基所形成的肽键。
